Though India has a minority population of Christians, this festival of joy is no longer limited to any sect or community. It is widely celebrated as a time for some mouthful of yummy baked confectioneries and as a time to rejoice and go merry.

Tina Dawson is the person behind this wonderful website about plant-based foods. She, being a food photographer, stylist and writer has brought to us a deep-fried cardamom flavoured cookie. It is crisp on the outside and soft on the inside, and is truly a cookie to try this Christmas. It is prepared by mixing the all-purpose flour, rice flour, cardamom powder, baking soda, egg, butter, and vanilla to get a sand-like mixture. After giving the beautiful shape to it with the help of a fork, the Kal Kals are deep-fried to get this delicious Christmas cookie.

Pronounced as ‘Bolinyas’, this is a fusion recipe and has a Portugese-Goan origin. They are crisp from outside and soft coconut-like from inside, a perfect tea-time partner for all seasons. Though the procedure is a bit elaborate that takes 2 days with overnight refrigeration of the batter, it is definitely worth it. Chitra’s Food Book
Also called Achappam in Malayalam, it is a very popular snack from South India. What makes it unique is its mild sweetness and the flavour of coconut milk. Chitra has come up with the eggless version of it while still preserving the authentic taste. The recipe mainly involves rice flour, maida, powdered sugar, cardamom powder, water and coconut milk. The fluid batter is deep-fried with the help of rose-shaped moulds.
The crucial steps that one needs to follow is that the mould needs to be hot enough before frying, the consistency of the batter has to be proper and one should be careful when removing the roses from the mould after frying.
