Easy breakfast recipe: Potato Egg Casserole

The festive and the great Indian marriage season is at its peak. Eating out at one function or another becomes a routine for most families. Thus the need for a healthy breakfast to give ourselves the much needed respite from catered food and to keep our systems running is primary.
As it is, the last thing I want to do on a busy morning is to stand and irritably cook a hot meal for breakfast. Most of the times I am so lazy that all I want to do is slather a few bread pieces with butter and be done with it. Added to that, the festivities leaves me so tired, that getting into the kitchen and making elaborate, intensive “Big Indian Breakfasts“ is something best avoided.
But the first meal of the day comes with a lot of consideration for the home cook. The breakfast needs to be healthy, it needs to be quick and it needs to be different. Ticking all those boxes is one mean feat. To do this and still have happy faces wolfing it down is the litmus test that we all hope to pass every morning. After all it has been said often enough that breakfast is the most important meal of the day and with our busy schedules it has also slowly become the most negated or hurried meal of the day.
What we probably need to understand is that taste and health are in fact quite a compatible pair and not arch enemies like most believe. The key is to be able to relax and see your existing breakfast options in a new light and just reinvent them with a healthier twist. Also stressing about breakfast really takes the fun out of a good meal that on a holiday can hold the key to some very interesting conversations and quality time together for everyone.
What can easily set this scenario right is treating breakfast as a relaxed and fun meal. It can be as creative as possible and can involve as less cooking as you want, and still be a healthy breakfast.
Some really easy yet healthy ideas to achieve good breakfast results in less time could be as simple as these:
Grilled hung curd sandwiches: Getting a grilled sandwich maker is one of the best decisions ever if you want a healthy and quick breakfast. All you need is a basic hung curd spread made by mixing hung curd with Italian herbs and keeping it in the fridge. This sort of a spread is good in the fridge for at least 2 weeks. Just layer the bread with a smattering of the home made spread, some tomato, cucumber and boiled egg or potatoes or cottage cheese or salami, basically anything that you like and you have amazingly tasty breakfast sandwiches without the fuss.
Fruit power yoghurt (curd): This is probably one of the most power packed and all inclusive breakfasts that uses just one dish. Cut up a bunch of fruits you love – kiwis, apples, oranges, papaya – and add a generous dollop of any yoghurt (the one made at home is the best). Sprinkle muesli or for the lack of store bought muesli, just sprinkle some cornflakes and nuts and top it all with a spoonful of honey. Looks great, tastes great and is so packed with health it will have you swooning.
Microwave omelette: Eggs are healthy, but not if you make an omelette in spoonfuls of oil or butter. The best way to have your omelette and eat it too (pardon me for the slight idiom modification) in a healthy way is to microwave it. Simply microwave a little butter, less than a teaspoon at that in the microwave to melt it. Take two egg whites and add finely cut capsicum, onion, tomato and seasoning and beat it all together with the melted butter. Microwave the mixture on full power for about 2 minutes. Check for doneness and microwave for another 30 seconds if needed.
To add to this interesting array which is making me crave for breakfast now, here is one of my favourites which puts together two of my favourite things to eat; potatoes and eggs. Read on.
Ingredients (Serves 2)
Large boiled potatoes – 2
Eggs – 2
Garlic – 4-5 cloves, crushed
Mixed seasoning including oregano, rosemary, thyme – 1 teaspoon
Black pepper – 1 teaspoon
Olive oil – 2 teaspoons
Cheese (optional) – 1 cube, grated
Method
Preheat oven to 180 degrees.
Take a baking dish and cut the boiled potatoes into discs and layer the dish with them.
Mix the crushed garlic and the seasoning in the olive oil along with half of the black pepper and drizzle it all over the potatoes. Mix it through the potatoes.
Put the dish in the oven and let it cook for about 10 minutes. Take the dish out and break the eggs on the potatoes and try to keep the yolks intact.
Sprinkle the rest of the black pepper and grated cheese on top and put the dish back in the oven till the eggs are set, about 8 minutes.
And you have an amazingly scrumptious, no hassle and wholesome breakfast ready. Dig in and have a yummy start to your day!
